The root contains 86-90% water and only traces of protein and lipids. It is high in oligofructose (also called fructo-oligosaccharide), a dietary sugar, which the human body does not metabolize, hence its potential use for diabetics and in body weight control. Moreover, increased intake of oligofructose has been associated with improved gut health because of the stimulation of (beneficial) bifidus bacteria in the colon.
Yacon has been used for diabetes for thousand years, dried Yacon green leaves are available now as a herbal tea and is specially suggested because their hypoglycemic properties.
Yacon is more productive as an insulin source. Yacon root carbohydrates can be readily metabolized by ruminants but the palatability of the leaves is believed to be low. Stems have been reported to contain 11% protein by dry weight and the leaves 17% protein.

Production of dry chips. In this case yacon tuberous roots are peeled and cut in thin slices. The slices are first dried in a plastic tunnel, then oven-dried at 60°C (Kakihara et al. 1996). Dried yacon chips can be stored indefinitely.

Yacon constitutes a very promising resource for diet and medicine, because it represents an alternative for patients with diabetes, since the sugars it contains are stored in insulin form; a polymer of fructose or levulose, a sugar with special characteristic in that it is sweeter than glucose, but doesn’t elevate blood sugar, so it doesn’t cause problems for diabetics.
Yacon also reduces the risk of arteriosclerosis associated with resistance to insulin and dislipemia, and has been shown to be effective in feeding hypercaloric disorders, based fundamentally on carbon hydrates. The experimental data show that the oligofructose inhibits the hepatic lipogenesis and consequently they have a hypotrigliceridemic effect.
Yacon reduces the risk of osteoporosis because it improves the breakdown and absorption of calcium in the body, as well as increasing bone density and bone mass.
